The information you found is inaccurate to a large extent. Paladins can tank, obviously. With deep faith, you have up to +10 deflection, and +20 other defenses. In terms of pure defense stats, Paladin is superior to Fighter. Fighter has the benefit of overbearing guard, but this passive isn't necessary.

As a rule of thumb, X/Paladin is a good bet. Rogue/Paladin and Chanter/Paladin are probably the two most popular combinations. As Boeroer says, though, not clear there is any “best” solo build.
