No, higher agility doesn't increase bleeding. Bleeding occurs when they do a heavy attack (I.E., the right-click) and bleeding doesn't occur when they do a light attack (left-click). Sadly, there's just no benefit to equipping agility weapons on thralls EXCEPT for bows. Archery seems to be fine, just set the thralls to "Prioritize Ranged".

With a t4 tempersmith armorer and a +armor kit, my t3+ thralls get ~850 armor. Shieldwrights would he even better. Each piece gives a 3-4% agility damage bonus, so you can mix and match if you want other stat bonuses.
