From my testing, Sound Assistant/Separate App Sound does not do this. The closest that I can get to this is having YT Music play to a Bluetooth Speaker and have Spotify play from the phone's speaker and then put wired headphones in. You can only split 2 separate apps between 1 Bluetooth source and the phone speaker/wired headphones.
